CRUNCHY GOOSEBERRY BAKE

Preparation Method :

  • Place the gooseberry filling in a 600 ml shallow ovenproof dish. Sprinkle with half the sugar, and the orange juice.
  • Remove the crusts, and then cut the bread into 1 cm cubes. Melt the butter in a frying pan, add the cinnamon and bread cubes and toss until butter is absorbed.
  • Arrange the bread on top of the fruit and then sprinkle with the remaining sugar.
  • Cook in a preheated moderate oven (180°C / 350°F, Gas Mark 4) for 35 minutes until the topping is golden brown.
  • Serve hot with whipped cream.

INGREDIENTS

  • 800 gram gooseberry pie filling
  • 100 gram demerara sugar 
  • Juice of 2 orange
  • 4 large slices bread, cut 1 cm / ½ inch thick
  • 50 gram butter
  • 1 teaspoon ground cinnamon
