CRUNCHY GOOSEBERRY BAKE

- Place the gooseberry filling in a 600 ml shallow ovenproof dish. Sprinkle with half the sugar, and the orange juice.
- Remove the crusts, and then cut the bread into 1 cm cubes. Melt the butter in a frying pan, add the cinnamon and bread cubes and toss until butter is absorbed.
- Arrange the bread on top of the fruit and then sprinkle with the remaining sugar.
- Cook in a preheated moderate oven (180°C / 350°F, Gas Mark 4) for 35 minutes until the topping is golden brown.
- Serve hot with whipped cream.
INGREDIENTS
- 800 gram gooseberry pie filling
- 100 gram demerara sugar
- Juice of 2 orange
- 4 large slices bread, cut 1 cm / ½ inch thick
- 50 gram butter
- 1 teaspoon ground cinnamon
