BLACKBERRY COMPOTE WITH HONEY YOGURT
The blackberry apple and fresh fig compote with honey yogurt is loaded with delicious ingredients. With its blackberries, the dish appears more appetizing and irresistible. The creamy natural yogurt and clear honey is also use for toppings to add spice and flavorings.

Preparation Method :
- Pare the rind from the lemon using a potato peeler. Squeeze the juice.
- Put the lemon rind and juice into a saucepan with the sugar, elderflower cordial and water.
- Heat gently and simmer, uncovered, for 10 minutes.
- Peel, core and slice the apples, and add them to the saucepan.
- Simmer gently for about 4-5 minutes until just tender. Leave to cool.
- Transfer the apples and syrup to a serving bowl and add the blackberries.
- Slice and add the figs. Stir gently to mix. Cover and chill until ready to serve.
- Spoon the yogurt into a small serving bowl and drizzle the honey over the top.
- Cover and chill, then serve with the fruit salad.

- 1 lemon
- 60 gram caster (superfine) sugar
- 4 tablespoon elder / lower cordial
- 300 ml water
- 4 dessert (eating) apples
- 250 gram blackberries
- 2 fresh jigs
Topping
- 150 gram thick, creamy natural yogurt
- 2 tablespoon clear honey
