BLACKBERRY AND CREAM CRUNCH

Preparation Time :
15 minutes

Preparation Method :

  • Place the blackberries in a pan with the water and sugar. Heat gently until the fruit is tender. Cool, then rub the fruit through a sieve (strainer) or puree in a blender or food processor.
  • Whisk the cream until very stiff. Melt the butter in a pan, then stir in the biscuit (cracker) crumbs and mix well.
  • Place alternate layers of crumb mixture, blackberry and cream in tall sundae glasses, finishing with the cream.
  • Chill until ready to serve.

INGREDIENTS

  • 500 gram fresh or frozen blackberries 
  • 2 tablespoon water 
  • 2 tablespoon sugar
  • 250 ml double or whipping cream
  • 50 gram butter
  • 200 gram digestive biscuits, crushed
