BLACKBERRY AND APPLE COBBLER

- Preheat the oven to hot and place a shelf near the top.
- Put the apples into a saucepan with the fructose and water. Poach until softened, then add the blackberries and cook for a further 3 minutes. Pour the cooked fruit into an ovenproof pie dish.
- To make the topping, put the flour, baking powder and salt into a bowl and rub in the fat, until the mixture resembles fine breadcrumbs. Stir in the fructose and enough milk to bind the mixture together.
- Turn the dough on to a lightly floured hoard and roll out to a thickness of 1inch. Cut out rounds with a 1inch fluted cutter.
- Arrange the scone rounds, overlapping, around the edge of the pie dish and glaze with a little milk.
- Bake in the oven for 10 to 15 minutes until the topping is golden brown.
INGREDIENTS
- 1 kilogram cooking apples, peeled, cored and sliced
- 2 tablespoon fructose
- 8 tablespoons water
- 500 grams blackberries, cleaned
Topping
- 500 grams whole meal flour
- 4 teaspoons baking powder
- Pinch of salt
- 50 grams margarine
- 2 tablespoon fructose
- 300 ml skimmed milk
- Skimmed milk, to glaze
