ALMOND AND STRAWBERRY MALAKOFF

Almond and Strawberry Malakoff is truly a great and healthy dish that can satisfy your mouth! The time for its preparation would last for almost four hours and can be served for eight people! You would be happy once you’ve tasted it on because it really ignites your passion in eating!

Preparation Time :
4 hours

Preparation Method :

  • Line the bottom of a 3 inch round cake tin with greased greaseproof paper or nonstick parchment.
  • Trim one end off the sponge fingers so they fit the depth of the tin; reserve the trimmings.
  • Mix the orange juice with the sherry. Dip in the sponge fingers, one at a time, for a few seconds to soften slightly, and then arrange them, rounded end down, around the edge of the tin.
  • Reserve any remaining juice for the filling.
  • To make the filling, beat together the margarine and sugar until light and creamy.
  • Add the cheese, ground almonds, orange rind and reserved juice and beat well. Set aside about one- third of the strawberries; slice the remainder.
  • Spread one-third of the almond mixture in the bottom of the tin. Cover with half the sliced strawberries and sponge trimmings.
  • Spread another third of the almond mixture on top, then the remaining sliced strawberries and sponge trimmings. Finish with the remaining almond mixture and level the surface.
  • Cover with a small plate or saucer, place a weight on top, and then chill in the refrigerator for at least 4 hours until firm.
  • To serve, invert the Malakoff on to a serving plate and decorate the top with the reserved strawberries.

INGREDIENTS

  • 25 sponge fingers
  • Finely grated rind and juice of 4 oranges 
  • 4 tablespoons sherry

Filling

  • 200 grams margarine 
  • 200 grams light soft brown sugar
  • 500 grams curd cheese 
  • 250 grams ground almonds 
  • 500 grams strawberries
