- Peel the bananas and arrange them in a buttered shallow casserole.
- Combine the orange and lemon juices, brown sugar and salt and pour over the bananas.
- Dot with butter and cook in a preheated moderately hot oven (200°C / 400°F, Gas Mark 6) for 10 to 15 minutes.
- Serve hot or warm, sprinkled with the coconut and topped with whipped cream.
- Chill until ready to serve.

- 2 tablespoon freshly grated or desiccated coconut
