HONEYED APRICOTS WITH BRANDY

Preparation Time :
15 minutes

Preparation Method :

  • Plunge the apricots into boiling water, leave them for a minute, then rinse in cold water.
  • The skins should slip off easily. Cut the peeled apricots in half and remove the stones (pits).
  • Place the honey, lemon juice and water in a pan and bring to the boil.
  • Add the apricots, reduce the heat and simmer very gently for 8 to 10 minutes, or until the fruit is tender when pierced with a fine skewer. Leave the apricots to cool in the syrup, then stir in the brandy.
  • Chill and serve over vanilla ice cream.

INGREDIENTS

  • 20 ripe apricots 
  • 400 gram honey 
  • 4 tablespoons lemon juice 
  • 4 tablespoons water 
  • 4 tablespoons brandy
