- Plunge the apricots into boiling water, leave them for a minute, then rinse in cold water.
- The skins should slip off easily. Cut the peeled apricots in half and remove the stones (pits).
- Place the honey, lemon juice and water in a pan and bring to the boil.
- Add the apricots, reduce the heat and simmer very gently for 8 to 10 minutes, or until the fruit is tender when pierced with a fine skewer. Leave the apricots to cool in the syrup, then stir in the brandy.
- Chill and serve over vanilla ice cream.

- 20 ripe apricots
- 400 gram honey
- 4 tablespoons lemon juice
- 4 tablespoons water
- 4 tablespoons brandy
