Preparation Method :
- Preheat the oven to Gas Mark 8 / electric oven 230°C.
- Place the sponge on an ovenproof serving dish. Spread the apple pieces over the surface and then spread the ice cream over the apples. Place in the freezer.
- Place the egg whites in a large bowl and whisk on a fast setting until stiff but not dry.
- Add a teaspoon of sugar at a time, continue whisking at high speed, until the meringue is thick and glossy.
- Remove the dish from the freezer and spread the meringue all over the ice cream and sponge, make sure that there are no gaps in the meringue.
- Place in the oven straight away and bake for about 4 minutes or until the meringue is golden brown.
- Dust with icing sugar and serve immediately.

- 320 grams / 12 oz / 1 jar of chunky apple pieces
- 500 ml / 1 lb / 1 tub of toffee ice cream
- 4 large egg whites
- 220 grams / 9 oz / 1¼ cups caster sugar
- 10-inch sponge flan case
- Icing sugar and sparklers, to serve
