- Whisk the egg whites until stiff, and then lightly fold in the sugar. Place the apple in a bowl and gently fold in the egg whites with a metal spoon.
- Divide the raspberries between two glass dishes, sprinkle with icing (confectioners') sugar, then top with apple mixture.
- Serve immediately with sponge (lady) fingers.
INGREDIENTS
- 4 egg whites
- 50 gram caster sugar
- 200 gram apple puree
- 400 gram fresh or frozen and thawed raspberries
- 4 tablespoons icing sugar
- Sponge fingers to serve
