BAKED BABY APPLES WITH FUDGE YOGURT

Preparation Method :
- To make the fudge yogurt, whisk the whipping cream until thick.
- Fold in the yogurt and put into a bowl.
- Sprinkle over the brown sugar then cover and chill in the refrigerator for 1 hour.
- During chilling the sugar will liquefy and form a thin layer of 'sauce'.
- Preheat the oven.
- Wash the apples and remove the cores. Using a sharp knife, make an incision round each apple about halfway up, so the apple can expand during baking.
- Put the apples in a small ovenproof dish and fill the centres with the apricots.
- Put a knob of butter on top of each one and bake in the oven for about 15 minutes, or until soft.
- Swirl the liquefied sugar through the yogurt and serve with the warm apples.

- 100 ml whipping cream
- 100 ml natural Greek- style yogurt
- 2 tablespoon soft dark brown sugar
- 2 small dessert apples
- 5 ready-to-eat dried apricots, chopped
- 1 teaspoon butter
