APPLE STRUDEL

- Warm a rolling pin, and flour a large clean tea towel. Roll the dough on the towel, and then leave it to rest for 15 minutes, covered with a damp cloth.
- Mix all the filling ingredients together and spread on the dough to within 1 inch of the edges. Brush the edges with a little water.
- Lift the 2 corners of the tea towel nearest to you and roll the dough away from you.
- Pinch the edges of the strudel to seal. Place the dough on a greased baking sheet and form into a horseshoe.
- Brush all over with the oil. Bake in a preheated moderately hot oven for about 20 minutes, and then reduce the temperature for a further 30 minutes.
- Serve warm or cold, cut into slices, with plain low-fat yogurt, if liked.

Dough
- 150 grams strudel paste, sufficient to make 10 inch squares
Filling
- 500 grams cooking apples, peeled, cored and coarsely grated
- 50 grams raisins
- 50 grams currants
- 2 tablespoon fructose
- 2 teaspoon ground cinnamon
- 4 teaspoons finely grated lemon rind
- 2 teaspoon vegetable oil
