- Sift the flour into a bowl, make a well in the centre and add the melted butter, egg, vanilla and grated lemon rind.
- Mix well with a wooden spoon, then add the remaining ingredients and stir thoroughly.
- Spoon the mixture into a well-greased shallow ovenproof dish and cook in a preheated moderately hot oven (200°C / 400°F, Gas Mark 6) for 30 to 40 minutes until firm to the touch and well browned.
- Serve hot with whipped cream, custard or ice-cream.
- Serve cold, sliced and buttered.

- 100 gram self-raising flour
- 50 gram butter, melted
- 2 small eggs
- 1 teaspoon vanilla essence
- 2 teaspoon grated lemon rind
- 150 gram brown sugar
- 8 stoned dates, chopped
- 2 tablespoon chopped walnuts
- 4 apples, peeled, cored and diced
