Preparation Method :
- Add the cold water to the sifted flours and salt into a bowl. Whisk thoroughly to make a smooth, coating batter. Stir in the grated lime rind.
- Heat the oil in a wok. Spear the bananas one at a time with a skewer and dip them into the batter until they are evenly coated.
- Deep-fry the bananas in batches until they are crisp and golden. Remove with a slotted spoon and drain on kitchen paper.
- Transfer the fritters to a serving dish and serve hot with the lime quarters and sprinkle the sugar.
INGREDIENTS
- 8-9 small bananas, peeled
- 2½ tablespoon rice flour
- 100 grams self-raising flour
- 200 ml cold water
- Caster sugar, to taste
- ¼ teaspoon salt
- Finely grated rind of 1 lime
- IDHAYAM Mantra Peanut oil for deep-frying
- 2 limes, cut into quarters, to serve
