Preparation Method :
- Preheat the oven to Gas Mark 4 / electric oven I 80°C.
- Place the cream and milk in a saucepan and bring to the boil over a moderate heat.
- Remove from the heat, add the chocolate pieces and stir until the chocolate has melted.
- Combine the egg yolks, eggs, demerara sugar and rum or brandy in a bowl and whisk gently to combine.
- Pour the chocolate cream over the egg mixture, whisk to combine and then pass through a sieve. Grease the ramekin dishes and spoon the chocolate custard into the dishes.
- Place the ramekin dishes in a roasting dish and pour boiling water into the roasting dish so that it is halfway up the sides of the ramekin dishes.
- Bake in the bottom of the oven, for 20-25 minutes or until the custard is set and firm to a gentle touch. Chill the custards, for 2 hours.
- Put the whipped cream in a piping bag with a star nozzle. Decorate the mousses with cream rosettes and chocolate curls.

- 100 grams plain chocolate broken into pieces
- 3 medium egg yolks
- 2 medium eggs
- Whipped cream
- Grated chocolate or chocolate curls, to decorate
