THAI RICE PUDDING BRULEES

Preparation Method :

  • Place the rice in a saucepan with the sugar a few pieces of the lime zest, cardamoms, and both milks. Bring to the boil over a moderate heat, stirring.
  • Simmer over a low heat for about 20 minutes, stirring time to time to prevent it from sticking or until the rice is cooked and the milk has been absorbed.
  • Allow to cool and then remove the lime zest and the cardamoms.
  • Fold in the cream, followed by the juice of the lime and spoon into six ramekin dishes.
  • Sprinkle demerara sugar generously over the surfaces of the puddings and place under a hot grill until the sugar has caramelised.
  • Chill for at least an hour or until ready to serve.

INGREDIENTS

  • 300 ml semi-skimmed milk
  • 300 ml coconut milk
  • 300 ml double cream, whipped to soft peaks
  • 50 grams flaked pudding rice
  • 1 tablespoon Demerara sugar
  • 3 tablespoon caster sugar
  • 1 lime
  • 3 cardamom pods, crushed open
