RASPBERRY CREME BRULEE

Preparation Time :
20 minutes

Preparation Method :

  • Divide the raspberries between 8 - 10 ramekin dishes.
  • Place the custard, mascarpone, sugar and creme fraiche in a large bowl and whisk until the mixture thickens.
  • Then spoon the mixture on to the raspberries and flatten the surface. Chill the mixture for at least 1 - 2 hours.
  • Sprinkle the surfaces generously with caster sugar and put under a hot grill to caramelise; serve straight away.

INGREDIENTS

  • 250 grams mascarpone cheese
  • 3 tablespoon caster sugar
  • 250 grams creme fraiche
  • 750 grams fresh raspberries
  • 500 grams custard
  • Caster sugar, to glaze
