RAISIN AND RUM RICE PUDDING BRULEE

Preparation Time :
10 minutes

Preparation Method :

  • Soak the raisins in the rum or brandy for at least an hour in a large bowl.
  • Preheat the grill. Add the rice pudding and buttermilk to the raisins and combine well. Spoon into four ramekin dishes.
  • Sprinkle the demerara sugar evenly over the surface of the rice mixture and grill until the sugar has caramelised. Chill for an hour or until ready to serve.

INGREDIENTS

  • 75 grams raisins
  • 2 tablespoon creme frafche (Homemade buttermilk)
  • 2 tablespoon demerara sugar
  • 5 tablespoon rum or brandy
  • 450 grams creamed rice pudding
