WORLD'S LONGEST PRALINE ICE CREAM CAKE

Preparation Method :

  • Break the milk and plain couverture into pieces, place them together in a double-boiler or pan over boiling water, and stir over low heat until melted.
  • Whip the heavy cream until stiff. Stir in the powdered sugar and the rum or orange juice, followed by the melted chocolate couverture.
  • Line an 8-in/20cm long, narrow pan with kitchen foil and arrange the chocolate wafers in it side-by-side.
  • You may have to trim some to size. Spread the chocolate mixture over them and smooth the surface.
  • Place the pan in the freezer, and leave for 3-4 hours.
  • Break the white chocolate couverture into pieces; melt it in a double-boiler or pan over boiling water on low heat until softened and smooth.
  • Remove the pan from the freezer, unmold the ice cream cake, and remove the foil.
  • Spoon the white chocolate coverture over the ice-cream cake, or pour it into a plastic bag, cut off a corner, and pipe the couverture over the cake.
  • If you like, you can crumble any remaining pieces of chocolate wafer and sprinkle them over the ice cream cake.

  • 175 grams milk chocolate couverture
  • 115 grams plain chocolate couverture
  • 600 ml heavy cream
  • 2 tablespoon sifted powdered sugar
  • 4-5 tablespoon rum or orange juice
  • 15 milk chocolate-coated, filled wafers
  • 115 grams white chocolate couverture
