WHITE CHOCOLATE CHEESE CAKE

Preparation Method :

  • Put the macaroons into a plastic bag, seal and crush them finely with a rolling pin. Put the crumbs into a mixing bowl.
  • Melt the butter and blend with the crumbs. Grease the bottom of a 12-in spring form pan and spread the mixture evenly over it. Press down firmly and leave the cake base to cool.
  • To make the filling: chop the chocolate couverture finely. Combine with the heavy cream in a bain-marie, melt, and leave to cool.
  • Split the vanilla beans open and scrape out the seeds. Mix the seeds with the cream cheese until smooth and add to the chocolate mixture.
  • Reassemble the spring form pan and grease it. Pour the mixture onto the cake base and smooth the top. Leave to set in the refrigerator for five hours.
  • Before serving, carefully loosen the sides the pan. Decorate the cake with the white chocolate whirls and cut into small pieces.

For the base

  • 250 grams macaroons
  • 120 grams butter

For the filling

  • 350 grams white couverture
  • 200 grams heavy cream
  • 1 vanilla bean
  • 700 grams mascarpone or cream cheese

For the decoration

  • 50 grams white couverture, chopped
