VIENNESE RINGS

Preparation Method :

  • Cream the butter with the mixer set to the highest speed for approximately 30 seconds, or until smooth.
  • Add the powdered sugar, cinnamon, and milk and mix until stiff. Sift the flour with the cocoa powder, and beat into the mixture at medium speed.
  • Spoon the mixture into a piping bag with a star-shaped nozzle and pipe out rings 2 inch in diameter onto a baking tray lined with nonstick baking paper.
  • Place in a preheated 350-400°F/180-200°C oven and bake for approximately 15 minutes. Allow to cool.
  • To make the filling: cream the butter. Add the powdered sugar, egg, and chocolate and mix again.
  • Fill a piping bag with the frosting, using the same nozzle, and pipe out over the underside of half of the rings. Sandwich the rings together and press lightly.
  • Before serving, dust the Viennese Rings with powdered sugar.

INGREDIENTS

For the dough

  • 175 grams softened butter
  • 200 grams sifted powdered sugar 
  • ½ teaspoon ground cinnamon 
  • 4 tablespoon milk
  • 275 grams all-purpose flour
  • 4 teaspoon cocoa powder

For the Filling

  • 125 grams softened butter
  • 3 tablespoon sifted powdered sugar
  • 150 grams plain baking chocolate, melted
  • 1 egg
