SPICE CAKE

Preparation Method :

  • Combine the butter or margarine with the honey in a food processor.
  • Beat until creamy, and then beat in each egg at 30-second intervals. Add the spices and the grated lemon rind.
  • Sift the flour, cocoa powder, and baking powder into a bowl and gradually add the milk while beating.
  • Stop adding milk when the mixture is thick enough to drop very slowly from a spoon.
  • Cook over boiling water on a low heat until softened and smooth.
  • Line an 8 x 4 in/30 x 11 cm loaf pan with nonstick baking paper, so that the paper overlaps the sides by about 1 in/4 cm.
  • Pour the mixture into the pan and smooth with a metal spatula. Bake in a preheated 450°F/240°C oven for about 45 minutes.
  • Leave the cake in the warm oven for about 15 minutes, then remove, unmold and leave to cool completely on a cake rack before decorating.

  • Pinch of ground cloves
  • 3 eggs
  • ¼ teaspoons freshly ground black pepper
  • ½ lemons, rind grated
  • 650 grams whole-wheat flour
  • 2 heaping tablespoon cocoa powder
  • 1 teaspoon baking powder
  • 100 ml milk
  • Salt
