MARBLE CAKE

Preparation Method :

  • To make the dough: sift the flour into a bowl and mix thoroughly with the yeast.
  • Add the rest of the ingredients and beat for five minutes, using the dough hook attachment on the mixer, first on the slowest speed, then gradually working up to top speed.
  • Leave to prove in a warm place until the dough has doubled in size. Knead the dough again until smooth and elastic.
  • Grease a bundt pan or tube pan and sprinkle it with breadcrumbs. Line the pan with two-thirds of the dough.
  • Add the cocoa powder, sugar, plain chocolate cake covering, and milk to the remaining dough and knead well.
  • Arrange the chocolate dough over the pale dough. Insert a fork and twist it to make whorls.
  • Leave the dough in a warm place again until the volume has increased by about a third (around 45 minutes).
  • Place the pan in a preheated 375°F/ 190°C oven and bake for approximately 50 minutes.
  • Remove from the oven and brush the cake with butter immediately, then dust with powdered sugar.

INGREDIENTS

For the yeast dough

  • 800 grams all-purpose flour
  • 1 package active dry yeast 
  • 150 grams sugar
  • 1 package vanilla sugar 
  • 200 grams melted butter
  • 4 tablespoon chopped hazelnuts (or other chopped nutmeats)
  • 6 eggs
  • 5 tablespoon warm water
  • 2 tablespoon cocoa powder
  • 4 teaspoon sugar
  • 5 tablespoons grated plain chocolate
  • 3 tablespoon milk
  • Breadcrumbs

For the topping

  • 4 tablespoon melted butter
  • Powdered sugar

    can you tell us 1 package of yeast = how many teaspoons and 1 package of vanilla sugar = how many tsps.

    could we use baking powder instead of yeast? I'm more comfortable this way. If so, how many tsp do you recommend?
