CHOCOLATE STAR COOKIES

Preparation Method :
- To make the cookie dough: whisk the eggs and water on the highest speed for 1 minute until frothy.
- Mix the sugar and vanilla sugar, add to the eggs and continue beating for another 2 minutes.
- Sift the flour with the cornstarch, baking powder, and cocoa powder. Gradually add to the mixture.
- Roll out the dough into a rectangle in/1 cm thick, and transfer to a jellyroll pan lined on the base and sides with nonstick baking paper.
- Place on the middle shelf of a preheated 350°F/180°C oven and bake for 10-15 minutes.
- Dredge a sheet of nonstick baking paper with sugar and unmold the dough onto it.
- Leave to cool. Use a star-shaped cookie cutter to cut out star shapes.
- To make the filling: mix the butter and chocolate nut paste until smooth. Spread the paste on one half of the stars and place the other stars on top.
- To make the frosting: stir the chocolate and creamed coconut in a bain-marie until smooth and glossy. Brush the cookies all over with the frosting.
- To make the topping: sprinkle a worktop with the powdered sugar and roll out the marzipan on it.
- Cut out marzipan stars with the cookie cutter. Sprinkle the marzipan with the lemon or orange juice.
- Arrange the marzipan stars on top of the star cookies. Place a halved candied cherry in the center of each star.

- 75 grams sugar
- 1 package vanilla sugar
- 10 tablespoon all-purpose flour
- 6 tablespoon cornstarch
- 1 level teaspoon baking powder
- 1 tablespoon cocoa powder
For the filling
- 2 tablespoon softened butter
- 10 tablespoon softened chocolate nut paste
For the frosting
- 150 grams plain or milk chocolate
- 4 tablespoon creamed coconut
- 100 grams plain marzipan
- Sifted powdered sugar
- 1 tablespoon strained lemon or orange juice
- Halved candied cherries
