CHOCOLATE SQUARES WITH CHERRIES

Preparation Method :

  • To make the dough: beat the butter for 30 seconds until soft and fluffy.
  • Beat in the sugar, vanilla sugar, and salt until the mixture is smooth.
  • Add the eggs at 30 second intervals while continuing to beat.
  • Sift the flour with the baking powder. Make a well in the center and add a tablespoon of the butter mixture.
  • Gradually work all of the butter mixture into the flour until smooth. Transfer half the mixture to a buttered jellyroll pan or sheet cake pan.
  • Mix the cocoa powder with the milk and the rest of the dough and spread this over the dough.
  • Drain the canned cherries well, and sprinkle them over the dough. Bake in a preheated 400°F/200°C oven for 35-40 minutes.
  • Remove from the oven and leave to cool in the pan.
  • To make the butter cream: make the pudding according to the directions on the package, using only sugar and milk.
  • Leave the pudding to cool then beat again. Beat the butter until soft and fluffy, and then beat the pudding into it.
  • Smooth this butter cream over the cake and leave to set. Melt the plain chocolate with the creamed coconut, stir, and pour over the cake.
  • The top of the cake can be decorated with chocolate shapes. Cut into 2-in/6 cm squares before serving.

For the dough

  • 200 grams softened butter
  • 200 grams sugar
  • 1 package vanilla sugar
  • Pinch of salt
  • 5 eggs
  • 600 grams all-purpose flour
  • 3 heaping teaspoon baking powder
  • 4 tablespoon cocoa powder
  • 1 tablespoon milk
  • 20 canned pitted cherries

For the butter cream

  • 1 package vanilla pudding
  • 4 tablespoon milk
  • 200 grams butter
  • 75 grams sugar

For the frosting

  • 200 grams plain chocolate pieces
  • 40 grams creamed coconut
