CHOCOLATE SPICE RING CAKE

Preparation Method :

  • Cream the margarine. Add the sugar, vanilla sugar, spices, and salt and mix until thick.
  • Add the eggs at 30-minute intervals, beating well after each addition.
  • Sift the flour and baking powder together, and add one tablespoon of them at a time to the mixture, while beating at medium speed.
  • Finally, stir in the grated chocolate and the chopped almonds.
  • Spoon the mixture into a greased 10-in tube pan. Bake in a preheated 360°F/180°C oven for around 50 minutes.
  • Unmold the ring onto a wire rack and leave to cool.
  • Cut the chocolate couverture into pieces and melt it with the creamed coconut in a bain-marie or in a bowl over hot water on a low heat until smooth and glossy.
  • Pour this over the cooled cake. If desired, decorate with extra grated or flaked chocolate.

INGREDIENTS

For the dough

  • 300 grams softened margarine
  • 450 grams sugar
  • 1 package vanilla sugar
  • 1 heaping teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves 
  • 1/8 teaspoon ground cardamom 
  • Pinch of salt
  • 5 eggs
  • 600 grams all-purpose flour 
  • 2 level teaspoon baking powder
  • 200 grams grated plain baking chocolate 
  • 400 grams coarsely chopped almonds

For the frosting 

  • 150 grams plain baking chocolate
  • 4 teaspoon creamed coconut
