CHOCOLATE APPLE CANDIES

Preparation Time :
4 hours

Preparation Method :

  • Dice the apple rings, soak them in the Calvados, cover, and leave for 3-4 hours.
  • Bring the cream to a boil and remove it from the heat. Finely chop the chocolate couverture and stir into the cream with the creamed coconut.
  • Allow the mixture to cool almost to setting point. Beat the mixture until light and creamy.
  • Add the apples and Calvados to the mixture and stir well. Spoon into a piping-bag with a large plain or serrated nozzle.
  • Pipe out rosettes into candy cases and decorate with pistachio nuts and almond flakes.

INGREDIENTS

For the candies

  • 4 dried apple rings
  • 3 tablespoon Calvados or applejack
  • 175 grams heavy cream
  • 225 grams plain chocolate couverture
  • 75 grams creamed coconut

For the decoration

  • Slivered pistachio nuts
  • Flaked almonds
