CHOC-CHERRY TRUFFLES

Preparation Method :

  • Bring the sugar and water to a boil. Let the syrup boil once to dissolve the sugar. Leave to cool.
  • To make the dough: whisk the egg yolks with the hot water until light and fluffy.
  • Gradually add two-thirds of the sugar and whisk until creamy. Mix the flour with the cornstarch and baking powder, sift over the egg mixture, and fold in.
  • Grease the base of an 8 inch spring form pan and line with nonstick baking paper.
  • Transfer the dough to the base and place in a preheated 400°F/200°C oven. Bake for 25-30 minutes.
  • Blend the syrup with the brandy. Prick the pastry base a few times with a fork and sprinkle with the liquid, cover and leave to cool.
  • To make the truffle paste: bring the cream and milk to a boil. Stir in the instant coffee, the dark chocolate, and the mocha chocolate.
  • Continue stirring until melted. Add vanilla sugar and salt. Remove the pastry from the base and crumble it over a bowl.
  • Use the mixer to blend the warm truffle paste with the pastry crumbs.
  • Put the bowl in a cool place. Divide the mixture into approximately thirty pieces.
  • Wrap each piece around a cocktail cherry. Dip the balls in sprinkles and refrigerate until required.

INGREDIENTS

For the sugar syrup

  • 2 tablespoon sugar
  • 2 tablespoon water

For the dough

  • 2 eggs
  • 3 tablespoon hot water
  • 5 tablespoon sugar 
  • 4 tablespoon all-purpose flour
  • 4 tablespoon cornstarch 
  • 1 level teaspoon baking powder 
  • 1 teaspoon butter
  • 3 tablespoon brandy

For the truffle paste

  • 7 tablespoon whipping cream
  • 2 tablespoon milk 
  • 2 tablespoon instant coffee
  • 100 grams plain baking chocolate
  • 100 grams mocha chocolate 
  • 1 package vanilla sugar
  • Pinch of salt
  • 30 cocktail cherries 
  • 200 grams plain chocolate sprinkles
