BROWNIES WITH CHOC-CHERRY FROSTING

Preparation Method :

  • Sift the baking powder with the all-purpose flour in a bowl. Melt the butter over low heat with the chocolate and gradually beat this into the flour.
  • Break the eggs and beat them one-by-one into the flour-and-chocolate mixture. Beat in the sugar, vanilla sugar, and ground walnuts.
  • Transfer the mixture to a greased 14x8 in/35 x 20 cm baking pan and smooth it with a metal spatula.
  • Drain the cherries well, pit and halve them, and sprinkle them over the dough. Then sprinkle with the grated chocolate.
  • Place the pan on the middle shelf of a preheated 350°F/180°C oven and bake for around 30 minutes. Leave the cake to cool in a pan.
  • Chop the chocolate couverture finely. Combine the milk and butter in a saucepan and bring to a boil, stirring constantly.
  • Add the couverture, and stir until melted, then pour this frosting over the brownies in the pan, smoothing with a metal spatula.
  • Leave in a cool, dry place (not the refrigerator) to harden for at least 2-3 hours.
  • Lay a paper doily or paper lace pattern over the frosting and sift the cocoa powder over it.
  • Remove carefully leaving a powdered sugar pattern. To serve, cut the sheet cake into 2x2 in/5 x 5 cm squares.

For the dough

  • 400 grams all-purpose flour
  • 2 heaping teaspoon baking powder
  • 150 grams butter
  • 100 grams melted plain baking chocolate
  • 4 eggs
  • 200 grams sugar
  • 1 package vanilla sugar
  • 275 grams ground walnuts
  • 200 grams canned morello cherries
  • 2 tablespoon grated plain baking chocolate

For the frosting

  • 100 grams plain chocolate couverture
  • 4 tablespoon milk
  • 3 tablespoon butter
  • Cocoa powder
