STUFFED CHICKEN WITH GOATS' CHEESE

Preparation Method :

  • Preheat the oven to 200°C/400°F/Gas 6. In a small bowl, mix the goats' cheese with chopped thyme, the chopped olives and plenty of salt and pepper.
  • Peel back part of chicken skin to make an opening and stuff the cheese mixture under the skin.
  • Place the chicken in a roasting dish. Add the potatoes and drizzle with a little olive oil until well coated. Season with salt and pepper and a handful of thyme sprigs.
  • Roast for 40 minutes until the chicken is golden, crispy and cooked through. Serve with the remaining olives scattered over.

INGREDIENTS

  • 200 grams goats' cheese
  • Bunch fresh thyme, chopped, few sprigs reserved
  • 300 grams can pitted green olives, drained, half chopped
  • Salt and freshly ground black pepper
  • 5 chicken breast or thigh fillets, skin on
  • 500 grams baby new potatoes, halved
  • Sesame oil, to drizzle
