STUFFED CHICKEN WITH GOATS' CHEESE

- Preheat the oven to 200°C/400°F/Gas 6. In a small bowl, mix the goats' cheese with chopped thyme, the chopped olives and plenty of salt and pepper.
- Peel back part of chicken skin to make an opening and stuff the cheese mixture under the skin.
- Place the chicken in a roasting dish. Add the potatoes and drizzle with a little olive oil until well coated. Season with salt and pepper and a handful of thyme sprigs.
- Roast for 40 minutes until the chicken is golden, crispy and cooked through. Serve with the remaining olives scattered over.

- Salt and freshly ground black pepper
- 5 chicken breast or thigh fillets, skin on
- 500 grams baby new potatoes, halved
- Sesame oil, to drizzle
