MILD SPICY CHICKEN IN A BRICK

Preparation Method :

  • Wipe the chicken brick with the cut garlic clove. Grate half the onion and place in a bowl with the crushed garlic, ginger, coriander, paprika, yogurt, wine, salt and pepper. Mix well.
  • Wash and dry the chicken and place the remaining half of onion inside.
  • Slash the flesh thoroughly all over and place the chicken in the brick.
  • Pour the yogurt mixture over and cover. Leave to marinate for 3 to 4 hours.
  • Place the brick in a cold oven. Cook for 2 hours. Remove the chicken from the brick and cut into 8 pieces.
  • Arrange the pieces on a serving dish, garnish decoratively with mint sprigs and serve with some of the juices from the brick.

INGREDIENTS

  • 2 clove garlic, peeled and halved 
  • 2 onions
  • 2 clove garlic, peeled and crushed 
  • 2 teaspoon ground ginger 
  • 6 teaspoons coriander seeds, crushed 
  • 4 teaspoons paprika 
  • 300 ml plain low-fat yogurt
  • 2 tablespoon white wine or vermouth
  • Salt
  • Freshly ground black pepper 
  • 2 kilogram roasting chicken 
  • Mint sprigs, to garnish
