HUNTER'S CHICKEN STEW

Preparation Method :

  • Place the chicken in a large bowl and drizzle with oil and the lemon juice. Season with salt and a generous grinding of pepper. Marinate in the refrigerator for at least 4 hours, or overnight.
  • Heat the remaining 3 tablespoons of oil in a large, deep frying pan over medium heat. Add the onion, carrot, and celery and sauté until softened a little, about 5 minutes.
  • Add the chicken pieces and sauté until golden, 5-8 minutes.
  • Pour in the wine and simmer until it evaporates, stirring frequently. Add the tomatoes and water. Cover the pan, decrease the heat to low, and continue to cook, stirring frequently.
  • After 15 minutes, add the olives. Simmer gently over low heat until the chicken is tender, about 20-30 more minutes. Serve hot, garnished with parsley.

INGREDIENTS

  • 2 kg chicken, cut into pieces
  • 100 ml sesame oil
  • Freshly squeezed juice of 2 lemon
  • Salt and freshly ground black pepper
  • 2 onions, coarsely chopped
  • 2 carrots, coarsely chopped
  • 2 stalk celery, coarsely chopped
  • 150 ml dry white wine
  • 1.5 kg tomatoes, peeled and chopped
  • 150 ml cold water
  • 200 grams black olives
  • Coarsely chopped fresh parsley, to garnish
