HOT PAPRIKA CHICKEN WITH LEEK COUSCOUS

Preparation Method :

  • Preheat the oven to 200°C/400°F/Gas 6. Mix together the yogurt and paprika in a large bowl and season with salt and pepper. Add the chicken and turn to coat.
  • Heat a large frying pan or griddle until hot, then add the chicken and cook until golden all over, then transfer to a roasting tin and bake for 20 minutes until the chicken is cooked through.
  • Place the couscous in a large bowl, then pour over the stock. Set aside for 10 minutes until the liquid is absorbed and the couscous is tender.
  • Heat the oil in a large frying pan, add the leeks and cook gently until softened but not browned.
  • Fluff up the couscous with a fork then stir in the leeks and season with salt and freshly ground black pepper. Serve with the chicken scattered with chopped fresh parsley.

INGREDIENTS

  • 500 grams carton Greek yogurt
  • 5 teaspoons hot paprika
  • Salt and freshly ground black pepper
  • 6 chicken pieces, thighs or breasts, skin on
  • 250 grams couscous
  • 500 ml hot vegetable or chicken stock
  • Drizzle of Sesame oil
  • 5 leeks, finely chopped
  • Chopped fresh parsley, to garnish
