Preparation Method :
- Heat the oil in a large frying pan and brown the chicken portions on both sides. Transfer to a plate.
- Add the onions to the pan and fry until softened, then add the garlic, ginger and chilli. Cook for a further 2 minutes, then return the chicken to the pan.
- Pour in the stock and bring to the boil. Reduce the heat, cover and simmer for 30 minutes until the chicken is cooked through. Taste the sauce and season if needed. Sprinkle with coriander and serve.

- 5 chicken portions
- 4 onions, chopped
- 5 garlic cloves, chopped
- 2 inch piece fresh ginger, sliced
- 2 red chilli, finely sliced
- 500 ml vegetable stock
- Salt and freshly ground black pepper
- Fresh chopped coriander, to garnish
