CHICKEN WITH SPINACH

Preparation Time :

Cooking Time :
30 minutes

Preparation Method :

  • Heat little oil in a saucepan over a medium heat and add the spinach leaves with salt.
  • Stir and cook for 3-5 minutes or until it turns to puree, but still some liquid remains.
  • Heat the remaining oil in a heavy-based saucepan and add the cumin seeds. When it begins to splutter add the chicken and adjust seasoning with salt.
  • Cover and cook, stirring occasionally, for about 10-12 minutes or until the chicken pieces are golden brown.
  • Remove from the heat and add the ground spices. Return to the heat, mix in the tomato puree and fry for a minute, add in a cup of water.
  • Cover and cook for about 8-10 minutes or until the chicken turns tender. Add the spinach with its liquid and cook for a further 3-5 minutes.
  • Serve with Saffron Rice.

INGREDIENTS

  • 500 grams baby spinach leaves, washed and drained
  • 50 ml IDHAYAM Sesame oil
  • 750 grams skinless chicken breast fillets, cut ito bite- sized pieces
  • 50 grams tomato puree
  • Salt to taste
  • ½ teaspoon cumin seeds

Ground Spices

  • 1 teaspoon coriander
  • ½ teaspoon chilli powder
  • 1 teaspoon fennel
  • 1 inch ginger
  • ½ teaspoon cumin
  • ½ teaspoon garam masala
