Preparation Method :
- Preheat the oven to 200°C/400°F/Gas 6. Mix together the chicken, mustard, honey and soy sauce in a bowl. Stir well and season.
- Leave to marinate for 1 hour, if you have the time, or cook straight away.
- In a large frying pan, heat the oil and cook the chicken, skin side down, in two batches, until starting to brown. Turn over and cook for 2 minutes.
- Transfer the chicken to a roasting tin and add the potatoes and peppers. Roast for 20 minutes until golden and tender and the chicken is cooked.

- 10 chicken thighs, skin on
- 2 tablespoon smooth mustard
- 2 tablespoon clear honey
- Generous splash soy sauce
- Salt and freshly ground black pepper
- Splash Sesame oil
- 5 sweet potatoes, peeled and roughly chopped
- 4 red peppers, peeled and roughly chopped
