CHICKEN WITH POTATO

30 minutes

Preparation Method :

  • Preheat the oven to 200°C/400°F/Gas 6. Mix together the chicken, mustard, honey and soy sauce in a bowl. Stir well and season.
  • Leave to marinate for 1 hour, if you have the time, or cook straight away.
  • In a large frying pan, heat the oil and cook the chicken, skin side down, in two batches, until starting to brown. Turn over and cook for 2 minutes.
  • Transfer the chicken to a roasting tin and add the potatoes and peppers. Roast for 20 minutes until golden and tender and the chicken is cooked.

INGREDIENTS

  • 10 chicken thighs, skin on
  • 2 tablespoon smooth mustard
  • 2 tablespoon clear honey
  • Generous splash soy sauce
  • Salt and freshly ground black pepper
  • Splash Sesame oil
  • 5 sweet potatoes, peeled and roughly chopped
  • 4 red peppers, peeled and roughly chopped
