CHICKEN WELLINGTONS

Preparation Method :
- Preheat the oven to 200°C/400°F/Gas 6. Trim off any fat from the chicken then generously spread the pate on both sides of each breast.
- Roll out the pastry. Cut out squares. Brush the smaller squares with egg and place a chicken breast on each. Season well.
- Brush the edges of the larger squares with egg, turn over and use to cove the chicken. Pinch the edges to seal the parcels. Chill for 30 minutes.
- Brush the top of the pastry parcels with egg and place on a baking tray. Bake for 20-25 minutes until golden brown and cooked through.

- 4 skinless, boneless chicken breasts
- 100 grams chicken liver pate
- 300 grams puff pastry, thawed if frozen
- 2 eggs, beaten
- Salt and freshly ground black pepper
