CHICKEN TAGINE WITH PEARS AND CINNAMON

Preparation Method :

  • Melt the butter in a large saucepan over medium heat. Add the pears and sauté for 2 minutes. Sprinkle with the cardamom.
  • Add the honey and gently turn the pears until lightly caramelized. Remove and set aside.
  • Add the oil to the pan and sauté the onions over low heat until golden, 10 minutes. Add the chicken, saffron, and ginger. Season with salt and pepper.
  • Sauté over medium-high heat until seared all over, 5 minutes. Add the cinnamon stick, raisins, cilantro, lemon juice, and water.
  • Bring to a boil, cover, and simmer until very tender, about 1 hour. Return the pears to the pan and add the orange zest, orange, and juice. Simmer for 15 minutes. Sprinkle with almonds and serve hot.

INGREDIENTS

  • 100 grams butter
  • 6 firm-ripe pears, peeled, cored, and quartered
  • 1 teaspoon ground cardamom
  • 100 ml honey
  • 100 ml sesame oil
  • 3 onions, finely chopped
  • 6 boneless skinless chicken breast halves
  • 2 teaspoon saffron threads
  • 4 teaspoons grated ginger
  • Salt and freshly ground black pepper
  • 2 cinnamon stick
  • 100 grams raisins
  • Fresh cilantro (coriander)
  • 3 tablespoon lemon juice
  • 6 strips orange zest
  • 5 orange slices, halved
  • 4 fresh orange juice
  • 4 tablespoons almonds
