CHICKEN TAGINE WITH PEARS AND CINNAMON

Preparation Method :
- Melt the butter in a large saucepan over medium heat. Add the pears and sauté for 2 minutes. Sprinkle with the cardamom.
- Add the honey and gently turn the pears until lightly caramelized. Remove and set aside.
- Add the oil to the pan and sauté the onions over low heat until golden, 10 minutes. Add the chicken, saffron, and ginger. Season with salt and pepper.
- Sauté over medium-high heat until seared all over, 5 minutes. Add the cinnamon stick, raisins, cilantro, lemon juice, and water.
- Bring to a boil, cover, and simmer until very tender, about 1 hour. Return the pears to the pan and add the orange zest, orange, and juice. Simmer for 15 minutes. Sprinkle with almonds and serve hot.

- 3 tablespoon lemon juice
- 6 strips orange zest
- 5 orange slices, halved
- 4 fresh orange juice
- 4 tablespoons almonds
