CHICKEN & RED WINE STEW

Preparation Method :

  • Heat the oil in a large saucepan over medium heat. Add the chicken and sauté until golden, 10 minutes. Sprinkle with the flour, letting it soak up the oil. Remove and set aside.
  • Add the bacon, mushrooms, onions, and shallots to the same pan and sauté over medium heat until lightly browned, about 10 minutes.
  • Add the garlic, tomato paste, and bouquet garni. Season with salt and pepper. Pour in the wine and stock. Return the chicken to the pan.
  • Cover and simmer over low heat until very tender, 45 minutes. Garnish with the herbs and serve hot.

INGREDIENTS

  • 5 tablespoons sesame oil
  • 2 kg chicken, cut into pieces
  • 3 tablespoons all-purpose flour
  • 250 grams diced bacon
  • 300 grams button mushrooms
  • 3 onions, finely chopped
  • 4 shallots, finely chopped
  • 4 cloves garlic, finely chopped
  • 2 teaspoon tomato paste
  • 2 bouquet garni + fresh herbs, to garnish
  • Salt and freshly ground black pepper
  • 500 ml dry red wine
  • 400 ml beef stock
