Preparation Method :
- Heat the oil in a large saucepan over medium heat. Add the chicken and sauté until golden, 10 minutes. Sprinkle with the flour, letting it soak up the oil. Remove and set aside.
- Add the bacon, mushrooms, onions, and shallots to the same pan and sauté over medium heat until lightly browned, about 10 minutes.
- Add the garlic, tomato paste, and bouquet garni. Season with salt and pepper. Pour in the wine and stock. Return the chicken to the pan.
- Cover and simmer over low heat until very tender, 45 minutes. Garnish with the herbs and serve hot.

- 2 kg chicken, cut into pieces
- 3 tablespoons all-purpose flour
- 250 grams diced bacon
- 300 grams button mushrooms
- 3 onions, finely chopped
- 4 shallots, finely chopped
- 4 cloves garlic, finely chopped
- 2 teaspoon tomato paste
- 2 bouquet garni + fresh herbs, to garnish
- Salt and freshly ground black pepper
- 500 ml dry red wine
- 400 ml beef stock
