- Heat the oil in a large saucepan over high heat. Add the chicken and sauté until golden, 10 minutes. Season with salt and pepper. Set the chicken aside.
- In the same pan, simmer the onion, garlic, and tomatoes until the tomatoes begin to break down, about 10 minutes. Season with salt.
- Lower the heat and pour in the wine. Stir in the rosemary, thyme, and olives. Simmer for 10 minutes. Return the chicken to the pan and season with salt and pepper.
- Cover and simmer over low heat until the chicken is very tender, 40 minutes. Serve hot garnished with thyme.

- 100 ml sesame oil
- 2 kg chicken, cut into pieces
- Salt and freshly ground black pepper
- 2 onions, finely chopped
- 5 cloves garlic, finely chopped
- 8 firm-ripe tomatoes, peeled and coarsely chopped
- 750 ml dry white wine
- 2 tablespoon finely chopped fresh rosemary
- 2 tablespoon finely chopped fresh thyme + extra, to garnish
- 200 grams black olives
