CAJUN CHICKEN WITH CORN RELISH

Preparation Method :

  • Rub the Cajun seasoning over the chicken, add the lime zest, juice and half the oil. Cover and chill in the fridge for 15 minutes.
  • Heat the remaining oil in a pan and fry the peppers and chilli until tender. Add the sweet corn, tomatoes, red wine vinegar, sugar, salt and pepper. Bring to the boil and simmer for 5 minutes.
  • Cook the chicken breasts on a hot barbecue or grill for 20 minutes, basting occasionally with the remaining marinade, until cooked through and the juices run clear when the chicken is pierced with a knife. Serve with warm or cold sweet corn relish.

INGREDIENTS

  • 5 teaspoons Cajun seasoning
  • 8 chicken breasts, slashed
  • Zest and juice of 1 lime
  • 4 tablespoons sesame oil
  • 4 red peppers, deseeded and finely chopped
  • 2red chilli, deseeded and finely chopped
  • 250 grams can sweet corn, drained
  • 500 grams can chopped tomatoes
  • 2 tablespoon red wine vinegar
  • 1 teaspoon caster sugar
  •  Salt and freshly ground black pepper
