BRAISED CHICKEN WITH PEPPERS AND CORN

- Heat the oil in a wok or frying pan, add the spring onions and ginger and fry for 1 minute.
- Add the chicken and brown lightly. Pour in the soy sauce and sherry and cook for a further 1 minute.
- Stir in the peppers and corn and stir-fry for 2 minutes.
- Pile the mixture on to a warmed serving dish.
