BRAISED CHICKEN WITH PEPPERS AND CORN

20 minutes

Preparation Method :

  • Heat the oil in a wok or frying pan, add the spring onions and ginger and fry for 1 minute.
  • Add the chicken and brown lightly. Pour in the soy sauce and sherry and cook for a further 1 minute.
  • Stir in the peppers and corn and stir-fry for 2 minutes.
  • Pile the mixture on to a warmed serving dish.
  • serve immediately. 

INGREDIENTS

  • 2 tablespoon vegetable oil
  • 5 spring onions, chopped
  • 2 inch piece root ginger, peeled and shredded
  • 750 grams boned chicken breast, shredded
  • 4 tablespoons light soy sauce
  • 4 tablespoons dry sherry
  • 4 green peppers, cored, deseeded and sliced
  • 750 grams baby corn or sweet corn, drained
