WARM CORONATION CHICKEN SALAD

Preparation Method :

  • In a large bowl, mix together the yogurt, curry paste and jam. Add the lime zest and juice and set aside.
  • Add the chicken to the remaining yogurt mixture and mix well to coat.
  • Preheat the grill to high. Place the chicken on a grill rack and cook for 8 minutes on each side, until cooked through. Leave to rest for 5 minutes, then cut into bite-size pieces.
  • Meanwhile, in a large bowl, mix the mango with the spring onions and salad leaves. Pour over the yogurt and lime dressing and toss to mix.
  • Add the chicken and coriander to the salad and serve immediately.

INGREDIENTS

  • 200 grams carton plain natural yogurt
  • 2 tablespoon hot curry paste
  • 2 tablespoon apricot jam
  • Zest and juice of ½ lime
  • 5 skinless, boneless chicken breasts
  • 2 mango, peeled and cut into chunks
  • 5 spring onions, thinly sliced
  • 250 grams bag salad leaves
  • 4 tablespoons roughly chopped fresh coriander
