WARM CORONATION CHICKEN SALAD

Preparation Method :
- In a large bowl, mix together the yogurt, curry paste and jam. Add the lime zest and juice and set aside.
- Add the chicken to the remaining yogurt mixture and mix well to coat.
- Preheat the grill to high. Place the chicken on a grill rack and cook for 8 minutes on each side, until cooked through. Leave to rest for 5 minutes, then cut into bite-size pieces.
- Meanwhile, in a large bowl, mix the mango with the spring onions and salad leaves. Pour over the yogurt and lime dressing and toss to mix.
- Add the chicken and coriander to the salad and serve immediately.
INGREDIENTS
- 200 grams carton plain natural yogurt
- 2 tablespoon hot curry paste
- 2 tablespoon apricot jam
- Zest and juice of ½ lime
- 5 skinless, boneless chicken breasts
- 2 mango, peeled and cut into chunks
- 5 spring onions, thinly sliced
- 250 grams bag salad leaves
- 4 tablespoons roughly chopped fresh coriander
