GRILLED CHICKEN SALAD

Bite-sized pieces of grilled chicken are served on a bed of shredded water cress and lettuce greens with walnuts (or pecans) and sultanas sprinkled on top. Mustard dressing provides ample flavour to this appetizing salad.

20 minutes

Preparation Method :

  • Season chicken breasts with black pepper and brush with olive oil.
  • Cook the chicken under a preheated grill until golden and cooked through. Set aside.
  • Reserve any accumlated juices. Cut chicken into medium slices.
  • To Make Dressing: Place mustard and vinegars in a bowl, whisk well then slowly whisk in the olive oil.
  • Adjust seasoning to taste. Arrange salad greens into a bowl of serving-size pieces.
  • Spoon dressing over salad greens, toss to combine and arrange on individual serving plates.
  • Arrange sliced chicken breast on the bed of greens, top with walnuts or pecans and drained sultanas.
  • Reheat and drizzle the reserved cooking juices over salad.

INGREDIENTS

  • 750 grams boneless chicken breast fillets
  • Green salad washed and dried, (watercress, raddichio, 
  • butter head lettuce or mignonette lettuce)
  • 50 grams walnuts or pecans, toasted
  • 100 grams sultanas, soaked in water to cover
  • 50 ml olive oil
  • Freshly ground black pepper, to taste

Mustard Dressing

  • 150 ml olive oil
  • ½ teaspoon Dijon mustard
  • 2 tablespoon red or white wine vinegar
  • 1 tablespoon balsamic vinegar
  • Salt to taste
