Preparation Method :
- Boil the potatoes in salted water until tender. Drain and transfer to a large bowl and toss in the French dressing while they are still warm.
- Stir in the spring onions and the salt and pepper, and leave to cool thoroughly.
- Stir the dressing into the potatoes, add the eggs, then chill.
- Arrange in the serving platter with lettuce leaves and pile the salad in the centre. Scatter over the cucumber and radishes.
- Coronation dressing : Heat the oil in a small pan. Fry the onion for 3 minutes, until soft.
- Stir in the curry powder or spice mix and fry for a further 1 minute.
- Remove from the heat and mix in altogether with the lemon juice, mayonnaise, yogurt and sherry.
INGREDIENTS
- 500 grams new potatoes
- 3 tablespoon French dressing
- 3 spring onions, chopped
- 6 eggs, hard-boiled and halved
- Frilly lettuce leaves
- ¼ cucumbers cut into thin strips
- 6 large radishes, sliced
- Salad cress, optional
- Salt and pepper
For the coronation dressing
- 2 tablespoon olive oil
- 1 small onion, chopped
- 1 tablespoon mild curry powder or korma spice mix
- 2 teaspoon tomato puree
- 2 tablespoon lemon juice
- 2 tablespoon sherry
- 350 ml mayonnaise
- 150 ml natural yogurt
