CHICKEN HAWAIIAN SALAD

Preparation Method :
- Boil for 10 minutes with salt and measured water till tender. Debone the meat and shred into small pieces.
- Mayonnaise : Blend the eggs with salt, pepper, sugar, mustard and vinegar in a blender or food processor.
- After few seconds gradually add in the oil till the sauce starts to thicken.
- Once the sauce thickens slightly, keeping the blender on, pour the oil in a thin stream from the cup directly in larger quantities.
- Churn till all the oil is used up and you get a thick mayonnaise dressing.
- Add lemon juice. Churn once more. Remove from mixer to a bowl. Chill for about 2 hours before use.
- Mix mayonnaise and cream with cheese and mix well.
- Squeeze pineapple slices well to remove excess syrup. Chop finely.
- 09Add shredded chicken, chopped pineapple, capsicum and olives to the mayonnaise. Mix well. Gently mix in the orange segramsents.
- Adjust seasoning. Arrange a few lettuce leaves in a bowl. Fill the salad in it and Serve chilled.

Mayonnaise
- 2 eggs
- 75 ml Olive oil
- 1 teaspoon mustard powder
- 1 teaspoon sugar
- 1 tablespoon vinegar
- 1 tablespoon lemon juice
- Pepper and Salt to taste
- 2 chicken breasts - cleaned, boiled and shredded
- 50 ml fresh cream
- 50 grams cheese - finely grated
- 4 slices of pineapple (tinned)
- ½ orange - segramsented
- ½ capsicums - cut into thin long pieces
- 4 black olives, optional
- Lettuce leaves to garnish
