SPANISH RICE WITH CHICKEN

Preparation Method :
- Season the chicken with salt. Heat the oil in a large frying pan over high heat. Add the chicken and sauté until browned, 10 minutes. Remove and set aside.
- Add the onions, garlic, bell pepper, and ham. Sauté until softened, about 5 minutes. Add the rice and stock and bring to a boil. Return the chicken to the pan. Stir in the saffron.
- Cover and simmer on low heat for 20 minutes. Stir in the mixed vegetables, chilli, and olives. Simmer until the rice is tender, about 10 minutes. Garnish with the cilantro and parsley and serve hot.

- 3 kg chicken pieces, with skin and bones
- Salt to taste
- 100 ml sesame oil
- 4 large onions, chopped
- 6 cloves garlic, sliced
- 2 red bell pepper (capsicum), seeded and diced
- 100 grams diced ham
- 500 grams rice
- 1 litre chicken stock
- 1 teaspoon saffron threads
- 300 grams frozen mixed vegetables
- 2 small green chilli, sliced
- 100 grams black olives
- Fresh cilantro (coriander) and parsley
