ROAST CHICKEN WITH GARLIC

- Preheat the oven to 200°C/400°F/Gas 6. Melt the butter and oil in a flameproof casserole dish. Keeping the heat high, add the chicken and fry, turning regularly, until browned on all sides. This will take 15 minutes.
- Transfer the chicken to a plate and add the garlic cloves, onion and shallots to the dish. Put the chicken on top and sprinkle over the rosemary, bay leaves and seasoning. Pour in the wine and bring to a gentle simmer.
- Cover with a lid and roast in the oven for 1 hour 15 minutes. Remove the lid and cook for a further 10 minutes to brown the chicken.
- Check the chicken is cooked thoroughly by pricking the thickest part of the meat with a skewer - the juices should run clear.
- Allow to stand for 10 minutes, then carve the chicken and serve with the juices from the dish and the garlic, onions and shallots.

- 30 grams butter
- 4 teaspoons sesame oil
- 2 large chickens
- 5 garlic bulbs, separated into cloves
- 2 onions, chopped
- 8 shallots, chopped
- 5 sprigs fresh rosemary
- 5 bay leaves
- Salt and freshly ground black pepper
- 300 ml white wine
