PERFECT ROAST CHICKEN

Preparation Method :

  • Preheat the oven to 200° C/400 °F/Gas 6. To make the stuffing, cook the onion in the oil for 5 minutes until softened. Mix with the remaining ingredients and season.
  • Wipe the chicken inside and out with kitchen paper. Season the cavity and insert half the lemon. With bird breast-side down, season the neck end and spoon in the stuffing.
  • Slice the remaining lemon and carefully insert under the skin over the chicken breast. Cover the breast with oil. Place the chicken, breast side down, on a rack in a roasting tin.
  • Roast the chicken for 20 minutes. Remove the chicken from the tin and drain off the excess fat. Sprinkle in the flour and stir well over a medium heat.
  • Slowly add the stock and bring to the boil. Simmer for 2 minutes. Serve with the chicken and stuffing.

INGREDIENTS

  • 2.5 kg chicken
  • 2 lemon
  • 2 tablespoon sesame oil
  • 2 tablespoon plain flour
  • 750 ml hot chicken stock

For the stuffing

  • 2 large onions, chopped
  • 2 tablespoon sesame oil
  • 50 grams butter
  • 250 grams fresh breadcrumbs
  • Zest of 1 lemon
  • 4 tablespoons each chopped fresh parsley and thyme
  • Salt and freshly ground black pepper
