DRY CHILI CHICKEN

Preparation Method :
- Marinate the chicken pieces in the marinade for at least 2 hours.
- Heat oil. Fry green chilies lightly and remove.
- Add the marinated chicken pieces along with the marinade to the remaining oil. Fry well till the chicken turns dry.
- Add measured water and cook covered till chicken turns soft and dry again.
- Mix in the green chilies, spring onions and capsicums. Stir for a few seconds. Adjust seasoning.
- Serve sprinkled with chopped spring onions greens or capsicum.
INGREDIENTS
- 500 grams chicken - cut into bite size pieces
- 9 green chilies - slit lengthwise
- 50 ml IDHAYAM Sesame oil
- 1 capsicum - cut into ½"pieces
- 2 spring onions - cut into ½" pieces
Marinade
- 2 tablespoons ginger-garlic paste
- 2 tablespoons soya sauce, use according to the colour
- 1 tablespoon vinegar
- 1 teaspoon red chili powder
- 1 teaspoon sugar
- ½ teaspoon ajinomoto
- Salt and pepper to taste
- 2 tablespoons sherry, optional
