- Preheat the grill to high and line a grill rack with foil. Thread the chicken strips onto skewers in a zigzag. Set aside. Bring the coconut milk to the boil in a pan, then simmer gently for 5 minutes until slightly thickened.
- Stir in the peanut butter and cook for 3 minutes, stirring, until smooth and combined. Season with salt. Divide the sauce between 2 bowls.
- Use one bowl of sauce to cover each chicken skewer then grill for 10 minutes each side until the chicken is cooked through. Serve with the remaining bowl of peanut sauce.

- 3 skinless, boneless chicken breasts or thighs, cut into strips
- 500 grams can coconut milk
- 4 tablespoons crunchy peanut butter
- Salt to taste
